I loved the old X-com series, then it has to be Counter-Strike. Goldeneye on N64 is also one of my alltime favorites.
I'd have to say either Metal Gear Solid or parasite eve 2, both were amazing for the PSX at the time. Don't know if i'd play them now though. :D
